The growing season started late in South Australia due to cool spring weather, although conditions were generally frost and diseasefree. Early, very warm summer weather led to an early vintage, especially in northern inland areas, with excellent fruit quality across all regions. An outstanding vintage Bin 707 to challenge the great 707s of 1996 and 1990.

When Max Schubert returned from Bordeaux , his mind was on Cabernet. After determining the unreliability of South Australian Cabernet, Schubert's decision was to release a super premium Cabernet wine only if the fruit were up to scratch. To this day, Bin 707 can only be made in good vintages. A multi-district blend sourced from Coonawarra, Bordertown, Padthaway and Barossa Valley, barrel fermented and wood matured for fifteen months, 1997 is rich with blackberry, currant and mint, presented in a smooth robe of deliciously handled oak.

The 1994 Bin 707 is a spectacular wine from an outstanding year. A crimson purple wine offering virulent aromas of saturated black fruits and mocha. Complex and firm with superb balance and character, this superb vintage continues to reinforce the Bin 707 reputation as an international benchmark for Australian Cabernet. Made from the finest fruit, it transcends the variances of the growing season, achieving a consistent style and outstanding quality. A classic release for the 1991 edition of Bin 707, the weather was relaxed and favourable, though yields were a little down. Coonawarra terra rosa Cabernet performed brilliantly. Fruit was sourced from superior South Australian vineyards, the focus as usual was the exceptional Cabernet Sauvignon grown around the Coonawarra. Arriving on the back of the outstanding 1990 vintage the previous year, Bin 707 1991 transcended the vagaries of vintage, maintaining the reliable and consistent styling, worthy of Australia's finest Cabernet wine.

A standout vintage, a very great year for the Bin 707, from one of the most exciting of all Australian red wine growing seasons. The development of Cabernet Sauvignon has been one of the longest running projects at Penfolds. Origninally formulated by John Duval, Bin 407 can establish kinship to the mighty 707. Bin 407 remains more restrained in style than it''s older sibling, a wine of elegance, consistently showing a clear varietal blackcurrant and cassis definition backed by fine grained tannins and cedary oak. The Cabernet fruit takes centre stage, oak never overwhelms but serves to frame the wine. The styling is masculine and reminiscent of a Bordeaux or Moulis.

Bin 407 was developed by Penfolds maestro John Duval in response to the increasing availability of high quality Cabernet Sauvignon fruit. Inspired by Penfolds Bin 707, Bin 407 offers varietal definition and approachability, complete with solid structure and great depth of flavour. As such, Bin 407 shares kinship with Australia's flagship Cabernet wine. Fashioned to a slightly more restrained, elegant style, with distinct varietal blackcurrant cassis fruit definition, fine grained tannins and cedary oak, which never overwhelms but serves to frame the fruit.

Developed by the legendary John Duval, Bin 407 could only be achieved after volumes of high quality Cabernet Sauvignon became consistently available, realising the opportunity for Penfolds to develop a pure Cabernet wine, as inspired by the flagship 707, albeit at a slightly more approachable entry level. Bin 407 is true to the enduring Penfolds style, a profound construct of Cabernet, featuring strong varietal character and solid structure with ripe fruit at centre stage. French and American oak, a portion of which must be new, is there in support.

Paul Osicka had the vision to establish vines in the parched sandy soils of Heathcote's easterm precincts during the 1950s. His closely husbanded vines are deliberately trained to very low yields, ensuring the berries are smaller and more intense in colour and flavour. Osicka adheres to strict organic principles, shunning the use of herbicides, insecticides or irrigation. A highly respected local identity, he retains access to the finest parcels of Cabernet Sauvignon in all Heathcote.

Full-bodied, powerful, French-styled 2001 exhibits aromas of lead pencil/graphite, creme de cassis, cedar, and tobacco. Scents of chocolate, currants, well-integrated oak, plenty of power and length, sweet tannin, and enormous potential, it will drink beautifully for 10-12 years. The tannins are very fine and powdery, already showing great integration at this early stage. Long dry and fruity finish, drink now and until 2011.

Coonawarra did not happen by chance, it was established on sound scientific principles after the assessment of extensive feasibility studies. The Parker Estate Vineyards at the southern end of Coonawarra, were established 1985 on rich Terra Rosa over limestone soils. Parker have achieved a remarkable reputation within Australia and throughout the world of wine, wherever great vintages are revered for their integrity and continuity of excellence. Commercial constraints played no part in the development. John Parker was driven by a passion to create the First Growth of Coonawarra Cabernet.

David O'Leary really knows about things Cabernet Sauvignon, having claimed a Jimmy Watson Trophy and twice International Red Wine Maker of the Year. From low yielding vines up to fifty years of age, grown to superior sites within the Armagh Valley and Polish Hill River districts, the O'Leary Walker team create a powerful and complex, exquisitely perfumed and seamlessly layered Cabernet Sauvignon, framed by judicious oak and supported by graceful tannins, reflecting the idyllic growing climes of Valley Clare.

Norfolk Rise Vineyard is located at the very southern tip of South Australia, renowned for its rugged coastline, exotic seafood and long, white sandy beaches. Heavily influenced by a unique microclimate, Norfolk Rise captures the regional characteristics of the lee under Mount Benson, translating into wines of the highest calibre.

Andrew Nugent grew up next door to the ancient Penfold wineworks at Magill. He established a profound reputation as viticulturalist amongst the grand old estates of McLaren Vale, before returning to sow his very own vineyards in Adelaide Hills. Treated to eighteen months in a selection of the finest French oak, Nest Egg's bramble, anise and cherry largess are supported by a caisson of opulent ebony tannins. Only ever made of the finest vintages, growing season 2013 yielded a mere 800 dozen individually numbered bottles of Nest Egg Cabernet Sauvignon.

The misty dawns and extended growing seasons of Gippsland East are an ideal mesoclime for Cabernet Sauvignon, the long ripening and sanguine soils afford grapes the opportunity to develop rich fruit esters, while waxing a coat of fine, rich tannins. An effusive elocution of Gippsland Cabernet, fully fragrant with punnets of dark berry fruits, seasoned by a dusting of fine herbs, closely followed by a tightly wound palate of blackberries and plum, framed by a wainscot of French oak and supported by a lozenge of brooding, lingering tannins.

Mr Riggs comes to Coonawarra. He knows from good red wines after tours of duty amongst the illustrious Cabernet vineyards of Napa Valley and Bordeaux. He now takes his pick from the choicest sites in the land. A collation of parcels from the Thomas and Harrison Weatherall vineyards in the northern precincts of Coonawarra, fermented on skins and pressed to a selection of new and seasoned oaks. Intensely bright, floral and fragrant with lovely length on the palate, the Cabernet of choice to accompany char grill or juicy roast.

John The Gaffer Riggs (1814-1902), great great great grandfather of Ben Riggs, migrated from Dorsetshire and settled in Gawler 1855. One of South Australia's most prominent farmers, he owned hundreds of acres dedicated to wheat. His sheep flock was also highly regarded and his methods progressive for the time. Success in the wheat trade was matched by significant awards at exhibitions in Sydney, London and Paris. Ben Riggs' own love of the land and his passion for it's offerings are directly attributable to the efforts of his far sighted ancestor.

A collation of parcels grown to good vineyards in the Eden and Barossa Valleys. The elegance of Cabernet picked off estate vines on the cooler ripening elevated aspects of Valley Eden, coalesce handsomely with the richness of parcels harvested from lower elevations. Open canopy management and moderate yields translate into a generously flavoured wine with lovely fragrances and sleek tannins. Mountadam were amongst the first to recognize Eden Valley as a superior mesoclime for Cabernet Sauvignon, now fully mature, they are now the finest cool climate vines in the land.

To this day, Mount Pleasant retain the most distinguished vineyards, reaching out from their environs in the Hunter Valley to secure parcels of Coonawarra Cabernet Sauvignon which are second to none. Inspired by their sterling efforts under the Brand's Coonawarra label, the McWilliam's team have applied their winning touch to a harvest of the finest fruit, achieving a generous and approachable Cabernet wine.

From those wonderful folks who brought us Morambro Creek. Since 1851, five generations of the Bryson family have been involved in agriculture, drawing fruit from the fertile soils of South Australia. The wines of Mount Monster are brimming with rich varietal flavours, exploiting fully the advantages of Padthaway's maritime climate with its long slow ripening season and sensational soils. A fine effort by winemakers who understand and value quality, fashioned for devotees of ripe and ready, fruit driven Cabernet Sauvignon exhibiting style, structure and panache.

Moppity have claimed many conspicuous accolades at national wine shows and international competitions. Their property sits at the highest elevation of the Hilltops region, its distinguished vines are among the eldest in the area, the source of fruit for many memorable vintages including the 2009 Jimmy Watson winner. Lock & Key is Moppity's entry level effort, a pure single vineyard Cabernet Sauvignon from mature, low yielding vines, fashioned to be approachable and satisfying for early drinking.

Since the genesis of Western Australia as a world class wine region, Moondah Brook have led the way with a conspicuous quality of Cabernet Sauvignon. Sparky Marquis is left handed, he worked in fine restaurants as a Maitre D' to pay his way through college, before returning to the family business of viticulture and establishing Mollydooker, not far from the parents vineyards at the eminent Fox Creek. An inventory of parcels from Coppermine and Ryans Road, Martins and Long Gully Road, barrel fermented an matured in a high proportion of French and American oak. Awash with brambleberry, dark currants, plummyness and cerise, lingering on a course of soft chamois tannins.

Gigglepot is a vibrant and effusive expression of Cabernet Sauvignon, charming and elegant, full of personality, a dazzling effulgence of fruit picked off the Rivers Lane vineyard in McLaren Vale. Vinified and matured in the finest American oak barrels, half of which are completely new. Briars, mocha and mint, rhubarb, cherry and creamy cassis over a supportive tapestry of delicate coconut oak, Gigglepot is fashioned to enthuse the splendour of superior vineyard McLaren Vale Cabernet to beam brilliantly and assuredly shine.

Mocandunda was planted to a stony ridge, at 450 metres altitude, a place of warm, sun drenched daylight hours, followed by the sobering cool of cloudless nights. A choice block atop the stony ridge was sown to a very special clone, a patch of red loamy clays, given pride of place for the realization of statuesque Cabernet Sauvignon wines. An extended term in the luxury of artisanally coopered French oak, completes an opulent style of Cabernet, its sublime seamlessness and exemplary integration, the ultimate indulgence of boot polish tannins, black bramble berries and urbane ebony oak.

One must have the courage to stand up for one's beliefs and not conform to mediocrity. Serpico was a famous New York cop who wasn't afraid to work against the system, he succeeded in exposing much of the injustice and inequity. Mitolo take Serpico's example to step outside the constraints of established style and redefine the accepted genre of Australian Cabernet. Serpico is made to the Amarone technique of drying grapes before fermenting, concentrating flavours, building great intensity and forming the silkiest tannins.

Monarcho was the most eccentric of all jesters at the court of Elizabeth I. He was the only fool ever named by Shakespeare and is featured in Loves Labour Lost. The blue attired Monarcho was more intelligent and politically aware than his behaviour suggested. A fifth of fruit in Jester Cabernet has been treated to the painstaking Amarone technique, drying grapes on open racks to concentrate flavour and soften the tannins. Jester is upfront and approachable for early appreciation, an accessible, mouth filling Cabernet wine.

Cabernet Sauvignon are among the earliest planting at Mitchelton, they have thrived under the balmy climes and yield an outstanding harvest with each vintage. A compilation of fruit from some of the oldest blocks have been treated to a traditional vinification and term of age in the pick of luxury oak barriques. Elegantly structured, intense savoury aromas are complemented by sweet leather and musk, the palate is all about concentrated black and red fruits layered over tasty tar and savoury black olives, fine, chewy tannins draw the palate out to exquisite length.

Clare Valley Cabernet at its finest, an elegant wine of power and grace, fully evolved after a spell of bottle age under the Mitchell estate cellars. The Sevenhill property was a pioneering homestead, it has supported orchards and vineyards since the 1860s, ulimately replanted to Cabernet Sauvignon in the early 1980s. These vines are now fully mature and yield the most exquisite fruit. Even in its youth, Sevenhill displays magnificent structure, the palate is brimming with cassis cherry flavours and ripe currant notes, before resolving on a soundly savoury tannin finish.

Mildara was at the vanguard of the rediscovery of the Coonawarra region. In 1953 Mildara's Ron Haselgrove bought 12,735 litres of Coonawarra red wine from Bill Redman. Ron loved Redman's wine so much, hewas inspired in 1955 to purchase Mildara's first 12.5ha of the Coonawarra's famous Terra Rossa soil. This latest release is a luscious woody fruity wine with elements of earth, chocolate sponge and red berries.

Mike Press knows about red wine, he learned his craft at Penfolds while working alongside the man who created the mighty Grange, before completing tours of duty at Krondorf, Seppelt and Mildara Blass. He also has a good eye for the land, selecting a choice site in Adelaide Hills which yields superior harvests of Cabernet Sauvignon. Such was the quality of fruit grown to the single precious vineyard at Lobethal, that Mike Press received overwhelming critical acclaim and several conspicuous wine show triumphs for his first ever vintage.

Awarded 3 GOLD MEDALS and made exclusively from Cabernet Sauvignon, picked extremely ripe to maintain the full sweetness of the style, and sourced primarily from McWilliam's own vineyards in the Riverina wine region in New South Wales. Partially fermented on skins for eleven days to extract maximum colour and flavour, a high quality grape spirit distilled at the McWilliam's Hanwood winery, near Griffith was added to the ferment in stages to assist with the integration of flavour. Receiving no oak treatment, this is a maverick fortified, brimming with riddles and complexities.
